One of the iconic flavours of Japanese cuisine, wasabi terraces in the Izu mountains produce premium wasabi. Izu is the birthplace of the Tatamiishi style of wasabi growing which has been recognised as a heritage agricultural system.

Katsuobushi commonly known as dried bonito or skipjack tuna is one of the main ingredients of dashi, soup stock. Dashi forms the backbone of Japanese cuisine. Katsuobushi has its origins in Shiokatsuo, salted bonito. A merchant in Izu still produces the original Shiokatsuo following a 1000 year old method.
